Mini Cheesecakes
Ingredients
  • 12 vanilla wafers
  • 2 - 8 ounce packages cream cheese (softened)
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 12 muffin tin liners
    • Directions
    Place 1 vanilla wafer in each muffin liner. Mix cream cheese, vanilla and sugar on medium speed till well blended.Add eggs mix well. Pour over wafers filling 3/4 full. Bake 25 minutes at 325. Remove muffin cups from pan when done and cool. Top with your favorite topping (fruit, nuts, etc)
